Icing can fix most any problem

On occasion I will bake Christmas cookies — there’s no rhyme or reason to it (unless there is a cookie swap!).

This year I felt an intense need to get in the kitchen and channel the spirits of family and friends near, far and beyond.

I’d been gathering ingredients throughout the month (an extra tip of the hat to Chris & Richard for finding mincemeat). And this Saturday was the big day to roll up the sleeves and get to work.

Started easy with peanut butter and the aforementioned mincemeat cookies, then tackled the buckeyes. I know, these are not technically cookies. What they are is a ton more work than I imagined and worth every minute. I totally borked the thumbprints by forgetting brown sugar until the end, but icing can fix most any problem!
