Enchilada disdain

Whenever I have enchiladas I’m seldom satisfied—they want a taco or something to round out the meal.

I could blame this on my inability to make compelling enchiladas, which I tried again tonight after a lovely walk. I even had canned sauce, chilies and oodles of spices and cheese.

I need to start from scratch and rethink the dish entirely or just let them go. I find tacos and tostadas infinitely more interesting.
