
Moroccan Inspired Winter Vegetable Stew
2 T Olive Oil
1 medium onion, chopped
3 cloves garlic, minced
3 medium shallots, chopped
1 medium sweet potato, cut in 1" pieces
1 small rutabaga, cut in 1" pieces
1 cup cooked chickpeas (canned, ok)
1/4 cup raisins or currants
1 15 oz can chopped tomatoes
1 Cup water
1 tsp cinnamon
1 tsp cumin
1 tsp paprika
1/2 tsp coriander
1/2 tsp ground ginger
Salt and pepper to taste
