Stehlin’s Meat Market

To make some Bo Kho (Vietnamese Beef Stew), I needed bone broth. I could’ve used some pre-made stuff, but I was determined to follow the recipe as closely as possible.

I pass by Stehlin’s Meat Market every day I drive to the studio and have been curious to stop in. Sure enough, they had some bones, along with a very fine looking brisket.

(The Bo Kho turned out nice, but I would’ve preferred tons more vegetables. The overall flavor profile and brisket were delicious.)
